Gluten Free Waffles & Vanilla Custard

I didn't get a crepe maker for Christmas (which ended up being okay - I learned the frying pan method), but I DID get a waffle maker.  You just can't make those delicious little squares on your own.  These turned out so crisp and wonderful,  I could have eaten them all day!  This recipe comes from, and I will be making them again!  The vanilla custard recipe comes from my family, and is a long standing tradition to eat with waffles.  Dip them in custard, or layer the waffles up with custard, jam, fresh fruit, whipped cream, whatever you desire!

Gluten Free Waffles


  • 1 cup brown rice flour
  • 1/2 cup potato starch
  • 1/4 cup tapioca flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup oil
  • 2 eggs 
  • 1 1/2 cups buttermilk
  • 1 teaspoon sugar


  1. Mix all ingredients together and pour into waffle iron in batches.  (Shouldn't baking always be this easy?)
  2. Top with your favourite toppings and enjoy!

Vanilla Custard


  • 1/3 cup sugar
  • 3 Tbsp cornstarch
  • 2 cups milk
  • 2 egg yolks
  • 2 Tbsp butter
  • vanilla
  • salt


  1. Mix sugar, cornstarch, milk, and salt together.  Cook on medium heat until thickened.
  2. Mix egg yolks, and pour a small amount of the hot milk mixture into them while whisking.
  3. Pour the eggs back into the pot of thickened milk and simmer for a few minutes
  4. Mix in butter and vanilla
  5. Enjoy over your waffles with your other favourite ingredients!
