Marinated tomato salad is an harvest favorite around here. All the tomatoes from the garden have been picked before the first frost and are sitting around in boxes ripening. Nothing beats a garden tomato. The juice and the flavor that just explodes when you bite into it cannot be matched. This is also the time when we have to use up those tomatoes as quickly as possible before they over-ripen and start to spoil. Jars and jars of tomato soup and salsa begin to fill the pantry shelves. I love Autumn.
Marinated Tomato Salad
INGREDIENTS
- 6 large tomatoes, sliced
- Sweet onion, thinly sliced
- 1 clove garlic, minced
- 1/2 tsp fresh thyme
- 1/4 cup minced green onion or chives
- 1/4 cup minced parsley
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup vinegar (Your choice, but we like red wine vinegar or balsamic for this)
- 1/3 cup extra virgin olive oil
DIRECTIONS
- Mix together garlic, thyme, salt, pepper, vinegar and olive oil to make the vinaigrette
- Layer tomatoes, onions, chives and parsley in a serving dish
- Pour vinaigrette over the top layer
- Allow to marinate for at least a few hours before serving. The longer it sits the better!
