I didn't get a crepe maker for Christmas (which ended up being okay - I learned the frying pan method), but I DID get a waffle maker. You just can't make those delicious little squares on your own. These turned out so crisp and wonderful, I could have eaten them all day! This recipe comes from
Food.com, and I will be making them again! The vanilla custard recipe comes from my family, and is a long standing tradition to eat with waffles. Dip them in custard, or layer the waffles up with custard, jam, fresh fruit, whipped cream, whatever you desire!
Gluten Free Waffles
Ingredients
- 1 cup brown rice flour
- 1/2 cup potato starch
- 1/4 cup tapioca flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup oil
- 2 eggs
- 1 1/2 cups buttermilk
- 1 teaspoon sugar
Directions
- Mix all ingredients together and pour into waffle iron in batches. (Shouldn't baking always be this easy?)
- Top with your favourite toppings and enjoy!
Vanilla Custard
Ingredients
- 1/3 cup sugar
- 3 Tbsp cornstarch
- 2 cups milk
- 2 egg yolks
- 2 Tbsp butter
- vanilla
- salt
Directions
- Mix sugar, cornstarch, milk, and salt together. Cook on medium heat until thickened.
- Mix egg yolks, and pour a small amount of the hot milk mixture into them while whisking.
- Pour the eggs back into the pot of thickened milk and simmer for a few minutes
- Mix in butter and vanilla
- Enjoy over your waffles with your other favourite ingredients!
